Abstract
One of the major vegetable producing areas in Indonesia is the Bandungan District, Semarang Regency. During harvest, vegetable production in this area is very abundant, causing the price of vegetables to become very low. In general, vegetables are perishable products and have relatively low prices. Therefore, we need innovation to cultivate vegetables that have a higher economic value and can improve the welfare of farmers. One product processing innovation is to cultivate vegetables for snacks that have a relatively high nutrient content. This research aims to improve the income of vegetable farmers by processing the vegetables into healthy snacks. There are 60 vegetable farmers in Bandungan District, Semarang. A qualitative descriptive analysis has been used to analyze the data in this research. The results shows that most of the people in the study area still rely on the results of cultivating vegetable crops to meet their economic needs. Consequently, if the harvest fails, people will be falling behind economically unless they are assisted. One way that this can be done to diversify the farm economy by processing vegetables into healthy snacks. By processing them into snacks, the farmers will usually get a better (higher) price than selling them as fresh vegetables, resulting in improvements to their incomes in the amount of 5-10%.
