Abstract

Indonesia is one of the tropical countries in Southeast Asia, with a warm climate making it overgrown with many plants, one of which is the banana plant. Banana plants have many things that can be used, for example banana leaves that can be used as food wrappers. In this study, we will discuss the effect of the kepok banana leaf withering technique in making takir. The purpose of this study was to determine the level of preference for the use of withering techniques using room temperature and fire heating in making the cut and the differences in the characteristics and appearance of the final cut. The method used is an experimental research method using the One Group Pretest-Postest research design. The data collection method is observation and documentation, then the data results will be processed using percentage descriptive analysis. Panelists were taken from street vendors who use banana leaves as packaging containers and culinary education students. The results showed that the preference level of using fire heating withering techniques was preferred with the percentage of preference in playing the fire heating withering technique of 86%, the strength of the construction of the container by 82%, the shape of the container 90%, the porosity of 85%, the color 69%. While the preference percentage for using room temperature withering technique is 78%, container construction strength is 78%, container shape is 74%, porosity is 78%, color is 93%.
